I liked the adaptation, am happy that they can take a slower pace to help expose Oguri's personality and background, even if the episode itself isn't as intense as later chapters. The episode didn't felt rushed or compressed.

The main characters switches from season to season. And if we are talking in terms of importance, Oguri is arguably as important as Symboli Rudolf when it comes to accomplishments and fame level.

Is it worth picking up this show

It's easily the best written Uma story, they seem to be adapting the manga 1:1 so it'll be very good from a story and character writing perspective. But it's much more drama and shounen coded than the other Uma anime. It still has comedy and fun moments / pairings, but don't expect it to be 85% CGDCT like the other series. This one focuses a lot more on the actual races. Ultimately though how much you like it will probably depend on how much you like Oguri Cap

Feels great having a manga I love get such a good adaptation. Lots of little things could turn it from good to great, depending how they handle stuff like「THE ZONE」or using native speakers for JC roles. While I'm dreaming, I hope they somehow adapt the whole manga since there's some amazing scenes in the later arcs.

I've been on a sports manga binge lately, and some of my other favorites (which also "happen" to feature cute girls) have been Medalist and Kenrantaru Grande Scene. As for other Uma manga, there's only really Star Blossom which is alright but not as good as Cingray.

Cinderella Gray is basically a branch of the franchise, so you don't have to watch S1-2-3 or the OVA/Movie to enjoy it.

Each series is basically standalone and focuses and different character stories.

To give you a serious answer, umas whose careers don't work out either end up in smaller regional leagues, go to higher education, take up another profession, get married to their trainer and settle down, etc etc.

I don't think their use in warfare would actually be particularly similar to how actual horses were used, mostly because despite being "parasitic" they are still for all intents and purposes very similar to human women. Similar in the fact that you need a safe, stable population of them to ensure you've got a large enough next generation because they're still the ones getting pregnant and carrying the babies to term.

Their population currently at least seems to be a lot lower than the general human population so if this ratio is at least somewhat similar to what it was in the past it would mean that historically speaking they were quite rare (because the human population was a lot smaller too). So even if they have high potential as combatants, they're quite rare and they're still female, so you cannot afford to lose too many of them in wars because you risk your already small population. This would probably end up with relegating them to specialized, highly trained elite units with very small numbers which you try to use for maximum effectiveness while keeping them as safe as possible.

For general cavalry purposes, you can much easier afford to lose men and actual horses in larger numbers than you can afford to lose horse girls. So unless their population was way, way higher (like similar levels of UM and human women) they probably would've been a fairly rare sight in active combat and those who did fight were likely special elites doing things only they could really do.
