Hard to write a compelling story about a tall rich chad who gets the girl. There's no nuance, no drama, no room for nuanced story telling or plot developments. People enjoy reading stories where opposites attract, or where unexpected events occur to keep them on their proverbial toes. People like rooting for the underdog. If the main character is some insecure nerd who has to come to grips with his own sense of low self-esteem in order to realize the mutual love he shares with someone out of his league, or vice versa, the story becomes far more compelling and enjoyable to the audience.

I think this is generally true, but you can still write compelling stories about the rich chad who gets the girl. It's just harder to pull off, so most authors just write what's easy.
And it's easy to write the fish out of water style romance. I think he key aspect of all good stories is that characters must overcome some kind of adversity, and experience developments over their story arc. When your main character is a nerd who falls in love with the girl out of his league, that's a lot of material to work with. Lots of room for growth, lots of avenues for development, and lots of potential adversity to overcome.
It's possible to write a good story centered around successful, attractive people falling in love, but it's just much harder to make it compelling and interesting.

For example, the equivalent to the common 'isekai'd by truck-kun, appears in jrpg world with cheat skill, proceeds to assemble harem' becomes 'isekai'd into otome game as some kind of 18-19th century pseudo-european princess, has some kind of special insight into plotlines/knows future, proceeds to assemble a group of prettyboy prince orbiters and EVENTUALLY chooses the one she liked first'.

the conflict for women seems to be playing the guy they like against a rival they also like but not quite as much. i guess there's the subconscious thing going on where they want the guy to prove himself to her or something.
there may also be social climbing involved, ie gaining money or status, maybe a bit of feminism since they often don't like the idea of being dependent on the prince.
sometimes there is conflict between female characters, the enemy female is usually a bully who attacks the FL with her clique.

So, there's lots of scope for conflict and plot. Stuff I've read that I can remember offhand:
