Been binging older stuff like LotGH, Appleseed, RSF Wings of Honneamise, and even Ergo Proxy and The Wind Rises, etc and I know not all the older shit was like this eg Hand Maid May, Cromartie, and Genshiken, but what happened to actually having deeper meanings to plot? Seems like a lot of newer stuff is just pump and dump shonen shit. You can't argue that it's a matter of money as story doesn't require paid labor. Just like with Hollywood, there are who knows how many stories that can be adapted to film, and even more that can be animated. So why not either dip into those or create deeper stuff about the human condition, current social issues, and/or hopes and dreams of a better tomorrow? Even "Her", arguably ahead of it's time, though poorly executed in live action, could be an incredibly delving tale into the psyche behind the drive for advanced technology and the psychological/sociological knock-on effects it has on an unsuspecting wider audience not mentally prepared for the ramifications of this implementation on an increasingly fracturing society. Even Blood Blockade Battlefront, full of goofy antics and puddle deep characters could still pull off a pre-"Joker" watch the world burn underlying theme and make you give a shit about the story. Instead, we get fucking Solo Leveling and countless other fantasy isekai OP MCs doing whatever the fuck they want with no wider ramifications or even afterthoughts. If GATE: Thus the JSDF Fought seems deep and insightful, you know shit's fucked.

I know I sound like a cranky old fart, but even if the animation is inferior to today, I've seen a sliver of that storytelling glory, like a good chunk of you, and yearn for a return. You know what I mean?

If you're so wise, care to enlighten this normalfag as to the intellectual, psychological, or even philosophical weight of Genshiken. Don't get me wrong, I enjoyed the first season and could empathize with the otaku spirit. I just don't think it was terribly deep in a broader sense. There was a bunch of "Game recognize game" kind of moments, but it wasn't like some universal kind of truth or desire. Not everyone's an otaku.

If you saw Kekkai Sensen then you know that good Anime are still being made, you just have to search for it.
The reason we get so much Isekai these days is because Kadokawa, who are filthy rich and have a borderline monopoly on light novels fund for their stuff to get adapted into multiple seasons. The reason most of those light novels are shit is because they didn't start as such, but as we novels that basically have no editors and are done by literalwhos who do trendchasing and their light novel, manga and anime adaptations decide to barely fix anything.
Solo Leveling is only popular in the west and Korea who as you know hardly ever make good stuff anymore and are flooded with normalfags, the anime isn't that popular in Japan. The reason why Solo Leveling is bad is because it's an adaptation of webtoon, a medium that similarly to web novels, barely has any editing. A Korean artist Boichi who does manga and hentai explained that he moved to Japan because physical Korean manga magazines basically died and moved to webtoons which were generally worse so he moved to Japan to do actual manga.
The problem with a lot of modern manga and anime is that Japanese zoomers don't really know what they want. They ask for stuff that's like early Chainsaw Man but also drop it on whim while not giving a chance to other stuff. That said this really only affects Weekly Shonen Jump and Jump+, other magazines tend to find a good enough audience and survive as long as the manga are actually good, create a massive buzz due to controversy or has nostalgia faggotry. Whether an Anime is successful or not depends on which medium or timeslot they release. If a Shounen releases at night it tends to do really poorly, most Anime that release exclusively on streaming services do poorly on Japan and while they can be popular everywhere else, most countries don't financially support the medium, so usually it needs to be popular in Japan first and foremost to succeed.

The Patlabor manga ran in Shounen Sunday and Trigun ran in Monthly Shounen Captain.
