Based on their performance on Egghead I've always thought that the Gorosei aren't actually good fighters, and they're just hard carried by their immortality, DF, and seemingly infinite stamina. Evidently they couldn't really hurt anybody except Vegapunk, a guy with no fighting skills. Sure, at least V. Nusjuro likely was a fighter considering he carries a sword, but they've been doing their job for probably hundreds of years, and they rarely leave the castle. Isn't it entirely possible their abilities have dulled massively? Though admittedly V. Nusjuro's performance against the Pacifista kinda goes against that, but hey, maybe he's the one member who's motivated to retain his skills. We have seen a few different implementations of Armament Haki - hardening, coating, ryuo (internal flow of some sort). What if Gaban's attacks leave a trace of Haki behind on the wound, causing the wound not to regenerate? Joy boy can store Haki in a knot for hundreds of years. It's probably not far-fetched to think you can leave traces of Haki behind from an attack. Or his axes are made of some rare sea stone.
