Sacrificing Saber guarantees you both die, but saving her leaves a chance of recovery, no matter how slim. Actually, this raises an interesting conundrum. Does Archer change in personality because he's now future me, or does he have the same personality as canon Archer even though he stems from a different Shirou, so to speak?
