There's already one literary race that can be multifaceted and lends itself well to be good, evil or anything in-between. It's the human race. Demons, devils and anything of that sort are meant to be near-exclusively irredeemably evil or the exception that proves the rule.

Demons are more like animals or calamities. They want to eat humans and they are good predators. For elfs and humans they are evil and humans are justified to defend. I didn't read manga I don't know if there is any origin of demons or more nuance

Demons and devils are concepts humans invented to hide their shadows in and blame evil or their own “corruption” on. The splitting and othering of our own selves. Divided we are weakened.
But the way forward is understanding and accepting your shadow. Writing demons with sympathetic traits and seeking to understand them is possibly the noblest and most important objective in storytelling and the human soul. It is about reclaiming ourselves.
