I think Humanoid stands are the "pinnacle" of battle Spirit. They represent someone who's will to fight takes their whole being into account, a person who considers their whole body an available tool to solve their conflicts.
That's why the elderly like Joseph, who's body is starting to lag behind his mind, manifested a non humanoid stand but the young Josefumi manifested a humanoid hermit purple
With this idea Johnny's Tusk makes more sense. The Spin is basically magic that comes from movement, the more he masters this infinite movement his stand goes from a baby like thing with no legs to a fully functional humanoid stand, showcasing how he starts to see himself and his own body as something useful for him again.
Just like Soundman and Valentine who also are strong convictions to do anything to achieve their goals so their stands take humanoid forms as they are willing to go that far.
Then we have people like Hot Pants, Ringo, Blackmore, and DISCO who's stands are objects likely because they think of themselves as needing tools or weapons to actually solve their conflicts.
HP is a woman in a man's world, plus she likely has a very low self-esteem

The reveal of him being the bad guy could come from Yasuho using Parsely Park on him because (for example) she doesn't remember him having a surname or something like that, or maybe he slips un during the confrontation with Jobin revealing he actually can see stands.

What I actually like about that Set up is the opportunity to make Tooru actually interact with Josuke, in canon they never even exchange more than a couple of words and I think the two of them could share some interesting thoughts on each other
Tooru seems to feel troubled due to his Rock human nature, the narration during the chapter describing their birth cycle felt almost melancholic with the whole "To be a rock human is to be alone" deal.
Josuke was also born from the earth and had no one who understood him or even knew about him, he didn't even have a name.
