It is probably a thing to drive vampires towards carnage. If they could simply make meat and blood, they'd have no reason to be so cruel as I don't think Monogatari vampires are mentally that different at least initially.
I don't think they're really different at all either. Any psychological changes are purely due to adjusting to their new selves over time.
It would be nice to get a sort of story that stretched over Kiss-Shot's time as a vampire. It would show through multiple scenes how she slowly grew into it over the years.
