Actual yuri is ok, but most of it is just yuribait. Throwing here and there hints of romance but keeping boys away from the waifus, so they remain pure to sell merchandise to insecure otakus, but without making them fully gay, so these otakus can still hope these waifus would totally rave for their dicks if they were real. What I find annoying about yuri isn't so much yuri itself as it is the absolutely insane and delusional yuri fans that annoy me.
They'll take two characters merely looking at each other for an above average length of time to mean that they're totally gay and in love with each other, meanwhile there is no actual basis for it in the actual work itself.
And yet, since yuri fans are used to just get what they get, they swarm to any "crumbs" that's produced. And thus any story that gets a reputation of possibly (in their eyes absolutely) having yuri, no matter how weak the basis for it actually is, ends up absolutely swarmed.
But it's not actually just fans. It's creators too. Creators know that yuri-fans go rabid on crumbs alone, so they'll often throw in yuri-bait in the stuff they produce. This 'flirting' with the yuri audience, no matter how largely unsubstantiated in the grander scheme of things, is often enough for yuri fans to 'claim' it.

And that's just annoying as hell. You can have whatever head canon or fanfiction you want. But when you're in every fucking thread, insisting that your delusional interpretations is the only way to interpret things. Then you're straight up just incredibly fucking annoying. Especially when you also turn hostile towards any "het-posting" or whatever, which is also not uncommon.

Finally. As a final caveat. I don't find lesbians attractive. I have nothing against them, but people who can't find me attractive aren't very attractive in my eyes either. It's reciprocal in that way. I can still respect them no big deal at all. But this still means that a work full of lesbians has less appeal to me.
But this lack of appeal is genuinely the least of my problems with yuri. It's the fans. Real gay people can be and often are cool. But yuri-fans? It's a deranged community.

I think the rise of yuri is the result of years of people getting blueballed by shitty hetero shows that go nowhere. Everyone is sick and tired of the oblivious MC who don't take BOLD HINTS or ever act on impulse. With Yuri shows they don't waste time, they want the relationships of characters to be established in the beginning or the middle of the series at the absolute latest to allow time for more post-relationship character building.
