Gilgamesh may not necessarily be a great character, but he is an excellent antagonist and fantastic foil of Saber and Shirou in the Fate and UBW routes.

If Gilgamesh was serious about his goals, nobody would stand a chance against him. Because he lacks the earnest desire to realize his intentions, or his goals are flippant, he is bested by the more serious and determined heroes. F/SN writes it's own "modern hero" who is contested against legendary figures from various myths or times. While Shirou's ideal isn't original or unique even within the context of the series itself (a borrowed ideal from his father) and his drive is questionable in sanity, he is earnest. Because of that, he bests Gilgamesh who treats the fight like a game until it's too late to put on the big boy gloves and actually get the work done and finish Shirou off in an instant like he is capable of.

There is a pervasive theme of real vs fake, and the argument seems to be about serious and heartfelt effort can even let a fake surpass the original. Shirou surpasses Gilgamesh, even if only momentarily, because he put his heart into it against an opponent who did not. Saber vs Assassin, on the flip side; Assassin is a false hero, an imaginary being who is bested not because he is fake but because his goal was to have a "good fight", not necessarily thinking about what comes after compared to Saber, who had somewhere to be and goals beyond the fight.

A well-written story is one that is consistent and understandable with a meaning that makes sense. It does not need to be groundbreaking, new, fresh or anything.
A well-written character is the same.

Frieren's main cast has no interesting arc regarding demons, so the demons being one-note just makes them boring.

A story is simply better when it encompasses the complexity something on the level of a sapient would exhibit. "They're just evil because they are/it's tradition" fell out of favor for a reason. Multifaceted antagonists are just more interesting on a moral/entertainment level as it invites the reader/viewer to consider the weight of the antagonist's actions/lived experience versus the current stable/unstable state of the world.

It's really not. I couldn't believe what an upgrade the anime was in almost every way. Especially with the choreography and backgrounds where the manga artist most struggles. But, I do think her art has always been serviceable and evocative where it counts plus I like her coloring style.
