Did you read the novels? It has tons, even the villain's have a shit ton of backstory. The anime just skips over a lot of stuff. The novels even explain how undead are created, why every cemetery or gravesite must have guards, and how even warring kingdoms have an unspoken truce to allow soldiers to go in and clean up their dead's corpses on the battlefield without threat of death.

Now if we're talking about tons of build up and world building that ultimately gets thrown in the trash because the author wants to end his story as fast as possible, then we're in total agreement...

Probably Mushoku Tensei. It's the only one that tries to have a metaphysics and history with realism. The rest relies too much on video game mechanics.
But I still haven't read Honzuki yet, and I heard that one has good worldbuilding too so who knows.

Has history, culture differences, governments with differing political systems, and both smart and dumb characters making decisions that make sense that shape events.
The MC is a doctor so there's some medical info too.

Out of the Isekai I've read/watched, it is a tie between Mushoku Tensei, Overlord, and Log Horizon.

Honzuki has great worldbuilding, but unlike a lot of isekai there's only really one country in it so instead of an expansive world for meant for adventure it just has a very tightly designed world that's consistent throughout. It also helps that the story is structured like a perpetual fish out of water where the retard savant MC has to constantly receive education about the world to fit in to her changing situation, and I personally really like the fairly unique and detailed magic system, but the details of that come very late into the story.
It's just nice that revelations about the world feel very natural because those details have always been the case and you could see the influence in the culture of the world long before you understand why
